Wild Edibles Seafood Update

Good morning Chefs and Buyers,
 
Thursday we will be seeing our usual shipments from Florida. In addition to the best American red snappers and fancy day boat grouper we will have a handful of line caught large pompano (1.5 lbs+). Fresh Florida shrimp (16/20 per lb) and hand picked blue crab meat will also be available (lump and jumbo lump).
 
From the Pacific Northwest more wild salmon will be coming, including: Bristol bay sockeye, Vancouver B.C. coho salmon, and Columbia river king salmon. Live Dungeness crab will be in our tanks. Dungeness are considered to be one of the best crabs because of high meat to shell ratio and the unparalleled sweet flavor profile. Each crab weighs between 2-3 lbs each.
 
Locally we were able to source fancy still alive skate, sushi quality fluke and some day boat porgies.
 
Nova Scotia short trip halibut is always great fish and tonights arrivals will be as nice as always. Most of this boats catch will be in the 10-30 lb range with maybe a 40 or 50 lb fish or two.
 
Still available but limited: king clip, razor clam, steamer clam, silver dory fillet, fresh lobster meat, and soft shelled crayfish.
