Wild Edibles Seafood Update

Good day Chefs and Buyers,

We will have a good variety of specials available for you to work with this weekend.

Soft shell crayfish are a truly unique item that is worth a try. Adaptable to any preparation you may have for soft shell crab, this 100% usable tender bodied Louisiana crayfish fries up crispy and bright red. Packed with flavor they open up a world of new crayfish possibilities. Each tray has 2 dozen.

Razor clams from Rhode Island are sweet with just the right amount of brine, these beauties make a great visual statement. We have fresh octopus from traps in Florida (sized 1-3lb) great quality, domestic at a great price. Pemaquid mussels are in tonight, demand has been high as we work with this co-op we hope to see increased production, but get your orders in to secure these full succulent mussels for the weekend. The next delivery will be for Tuesday.

Trigger fish is coming tonight, this southern cousin of our blackfish, and the hog snapper is a member of the wrasse family. The sweet fleshed southern fish is imbued with a crab like quality from the triggers diet. They look great on display as well. Each fish will be 2-4lbs, not a targeted species this by catch will be limited.

By popular request we are bringing in a few cases of Corvina from Baja California, they will be 5-10lbs each and collar off. Corvina is the west coast version of our wild striped bass, with a flesh that is a bit firmer it is a favorite in traditional ceviche recipes.

From more local fisheries we have bright eyed and candy gilled black sea bass (jumbos and large), Monster golden tiles are quite nice most fish are over 20 pounds and we also have a few grey tile in the 4-6lb size range.

Also available and nice are: mahi-mahi, wild striped bass (VA and MD), dayboat haddock, Long Island Blues, and hiramasa.
